Lentil Soup with Top Seedz

When the weather starts getting cooler, we’re all about recipes that are warm, cozy, and easy to make. Enter: lentil soup.
This one is hearty without being heavy, with tender lentils, tomatoes, garlic, and warm spices simmered together into a simple, flavorful soup. We added fresh spinach at the end for a little something green, then finished it off with one of our favorite things: Top Seedz.
Because every good bowl of soup deserves a little crunch.
What You’ll Need
- 1 yellow onion, diced
- 4 cloves garlic, minced
- 1 cup green or brown lentils, rinsed
- 1 15-oz. can diced tomatoes
- 5 cups vegetable broth
- 3 oz. fresh baby spinach
- 1 tsp. ground cumin
- ½ tsp. smoked paprika
- 1–2 Tbsp. apple cider vinegar, optional
- Salt, to taste
- Top Seedz Crackers or Roasted Seeds for topping
Let’s Make It
Start by sautéing your diced onion in a large pot until soft. Add the garlic, cumin, and smoked paprika and let everything cook together for another minute.
Next, add the lentils, diced tomatoes, and vegetable broth. Bring everything to a gentle boil, then lower the heat, cover, and let it simmer until the lentils are tender, about 25–30 minutes.
Once the soup is ready, stir in the fresh spinach and let it wilt right into the pot. If you like a little brightness, add a splash of apple cider vinegar before serving and season with salt to taste.
Now for the important part: the crunch.
