Tzatziki

This is such a wonderful refreshing accompaniment that goes so well with any of our crackers. It's also great with fish and roasted vegetables or just at the side of a salad to add a bit of flavor. I love it!

Ingredients

  • 1-1/2 cups plain yoghurt
  • 1 cucumber, deseeded and grated
  • 2 tbsp. lemon juice
  • 1 tbsp. chopped mint
  • 2 garlic cloves, crushed
  • paprika, for sprinkling
Directions
  1. Peel and de-seed the cucumber then grate.
  2. Wrap in a muslin cloth and squeeze out excess liquid.
  3. Combine yoghurt, cucumber, lemon juice, mint and garlic.
  4. Sprinkle with paprika.
