Tzatziki
This is such a wonderful refreshing accompaniment that goes so well with any of our crackers. It's also great with fish and roasted vegetables or just at the side of a salad to add a bit of flavor. I love it!
Ingredients
- 1-1/2 cups plain yoghurt
- 1 cucumber, deseeded and grated
- 2 tbsp. lemon juice
- 1 tbsp. chopped mint
- 2 garlic cloves, crushed
- paprika, for sprinkling
- Peel and de-seed the cucumber then grate.
- Wrap in a muslin cloth and squeeze out excess liquid.
- Combine yoghurt, cucumber, lemon juice, mint and garlic.
- Sprinkle with paprika.
