Olive Tapenade

  • 1 garlic clove, crushed
  • 1 lemon, juice only
  • 1 cup of olives (black, green or kalamata, whatever you have handy), pitted and chopped small
  • bunch fresh parsley, chopped
  • salt
  • freshly ground black pepper
  • 2-4 tbsp. extra virgin olive oil
  1. Mix it all together and Voila! For a smoother texture blend in a food processor adding a little more olive oil if desired.
  2. Enjoy on your favorite crackers.
