Such an easy light spring lunch. I love the chewiness of the bulgur wheat and the freshness from the herbs.  


  • 1 cup bulgur wheat, cooked 
  • 3 large tomatoes
  • large bunch fresh flat leaf parsley, finely chopped
  • small bunch fresh mint leaves, finely chopped
  • 1 small red onion finely chopped
  • 3 tbsp. lemon juice
  • 3 tbsp. extra virgin olive oil
  • sea salt to taste
  1. This is the easiest salad to make. Combine everything in a bowl.
  2. Demolish with some Top Seedz crackers.
