Such an easy light spring lunch. I love the chewiness of the bulgur wheat and the freshness from the herbs.
- 1 cup bulgur wheat, cooked
- 3 large tomatoes
- large bunch fresh flat leaf parsley, finely chopped
- small bunch fresh mint leaves, finely chopped
- 1 small red onion finely chopped
- 3 tbsp. lemon juice
- 3 tbsp. extra virgin olive oil
- sea salt to taste
- This is the easiest salad to make. Combine everything in a bowl.
- Demolish with some Top Seedz crackers.
