Rustic Chickpea Brown Rice Bowl

2 cups cooked brown rice
1 can (16 oz) chickpeas, drained and rinsed
1 can (14.5 oz) can diced tomatoes
2 cups fresh spinach
2 green onions, chopped
1 1/2 tsp cumin
Salt and pepper to taste

Fresh parsley

Mix all ingredients together and warm through. And top with some fresh parsley. Serve with some Top Seedz Cumin Crackers.
