Carrot Cake Maple Magic Muffins

We love to add a little bit of crunch to our baked goods. Check out these Carrot Cake Muffins with Maple Magic Roasted Seeds.

1/3 cup coconut oil
1/2 cup coconut sugar
1 egg
1/2 tsp vanilla extract
1/2 tsp maple extract (if you don't have this, add in an extra 1/2 tsp of vanilla)
1 tsp ground cinnamon
1/2 tsp ground ginger
1 cup grated carrots
1 Granny Smith apple (peeled and grated)
1 mashed banana
1 1/2 cups almond flour
3/4 cup buckwheat flour
1 tbsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tbsp chopped pecans (optional)
1 cup Top Seedz Maple Magic Seeds
1 tbsp raisins
1 tbsp dried cranberries
1/2 cup plain Greek yogurt

• Preheat oven to 350 F
• Mix the dry ingredients: flours, baking soda, baking powder, salt, cinnamon and ginger
• In a separate bowl, mix oil, sugar, egg, vanilla and maple extract
• Add the banana, carrots, apples and stir until combined
• Add the flour mixture and stir in the dried fruit, 1/2 of the pecans and yogurt
• Pour into twelve muffin cups lined with parchment paper liners and sprinkle the remaining seeds and nuts on top of the batter
• Bake on the middle rack for 29-32 minutes (or until they spring back)

I had the great fortune of discovering your wonderful crackers at the Saratoga Race Track. Both representatives working the booth were top notch! Very pleasant, informative and not pushy. I spent abt $60 on crackers!! Lol

I am curious as to why cornstarch is used vs Xanthan gum or guar gum. My research indicates the latter are better for digestion and lower in carbs. As someone with a sensitive tummy and watching carb intake, this is important to me.

I’m sure you’ve researched this exhaustively. Thank you for a response.
