Cauliflower with Brown Butter Pumpkin Seeds
A vegan dish everyone can enjoy: Cauliflower with Brown Butter Pumpkin Seeds.
Ingredients:
2 TBS Olive Oil
1 Head Cauliflower
2 TBS Vegan Unsalted Butter
1/4 Cup Raw Pumpkin Seeds
1/2 TSP Crushed Red Pepper Flakes
1/4 Cup Chopped Fresh Cilantro
1 TBS Fresh Lime Juice
Kosher Salt, freshly ground pepper
Directions:
Step 1:
Preheat the oven to 450 degrees and drizzle a baking sheet with olive oil. Slice cauliflower into 1/2 slices, place on the baking sheet, drizzle with oil, season with salt and pepper, and roast until browned on both sides.Step 2:
Melt butter, add pumpkin seeds, and toast until fragrant. To season, add red pepper flakes, cilantro, and lime juice.Step 3:
Arrange the roasted cauliflower on a platter, drizzle with brown butter pumpkin seeds, lastly, garnish with cilantro leaves.Enjoy
