Caramelized Onion & Ricotta Cracker Bites
Sweet, savory, and just the right amount of creamy. These caramelized onion & ricotta cracker bites are perfect for a crowd-pleasing appetizer that tastes as good as it looks.
Ingredients

6–7 yellow onions, thinly sliced

2 tablespoons oil

Fresh thyme

Sea salt

Black pepper

1–2 tablespoons balsamic vinegar

Ricotta cheese
Instructions
1. Caramelize the onions
Heat oil in a large non-stick skillet over medium heat. Add the sliced onions, thyme, salt, and pepper, tossing to coat. Cover and cook for about 5 minutes, until the onions begin to soften.
Uncover, reduce the heat to low, and continue cooking for about 1 hour, stirring occasionally. The onions should become golden, soft, and jam-like. If they start to dry out, add 1–2 tablespoons of water. If they begin to crisp, lower the heat further.
Once fully caramelized, stir in the balsamic vinegar and cook for 1 additional minute. Remove from heat and set aside.
2. Assemble the bites
Spread a generous layer of ricotta onto each 6 Seed Cracker. Top with a spoonful of warm caramelized onions.
3. Serve & enjoy
Arrange on a platter and finish with an extra sprinkle of thyme or a crack of black pepper if desired. Serve and enjoy every bite!
