Seedy Breakfast Bars

The whole family loved these and they were eaten within a couple of days, luckily I hid a few in the freezer.

Ingredients:

1 c. unsalted butter, melted

1⁄4 c. liquid honey

1 ripe banana, well mashed

3 eggs, beaten

1 c. coconut flakes

3⁄4 c. pumpkin seeds

1⁄2 c. sesame seeds

1⁄2 c. sunflower seeds

1⁄4 c. flax seeds

1⁄4 c. chia seeds

11⁄2 c. wholegrain rolled oats

2⁄3 c. wholemeal flour

1 tsp. baking soda

1 tsp. ground cinnamon

1⁄2 c. dried cranberries

1⁄2 c. chopped dates

1/2 c. dark chocolate

 

Method:

Heat oven to 350 F.

In a large bowl mix butter, honey and mashed banana, stirring to combine well. Add beaten eggs and mix well.

In a separate bowl combine oats, coconut flakes, seeds, flour, baking soda, cinnamon, dried fruit and chocolate chips.

Combine the two mixtures and stir. 

Scoop 1⁄4 cup-sized amounts into balls and press to about 1 inch height on lined trays.  Bake for around 15-20 minutes or until golden around the edges.

Transfer to a rack to cool.  Store in an airtight container
