Bibimbap with Top Seedz Raw Organic Sesame Seeds

INGREDIENTS:
Bowl Base + Garnish Ingredients:
- ¼ Cucumber
- 2 Large Eggs
- Shredded Carrot
- 1 Cup Kimchi
- 1 Cup Brown Basmati Rice
- 2 Tbsp Toasted Sesame Oil
- 1 Tsp Top Seedz Raw Organic
- Sesame Seeds, toasted
Sesame Spinach:
- ½ Tbsp Toasted Sesame Oil
- 1 Large Garlic Clove
- 6 Cups Spinach Leaves
- 1 Cup Beansprouts
- 1 Tbsp Soy Sauce
- ½ Tsp Caster Sugar
- Pinch of Sea Salt
Rice Vinegar Mixture:
- 2 Tbsp Rice Wine Vinegar
- ¼ Tsp Caster Sugar
- ¼ Tsp Sea Salt
Sweet Chilli Sauce:
- 2 Tbsp Gochujang (Chili Paste)
- 1½ Tbsp Rice Wine Vinegar
- 1 Tbsp Runny Honey
- 1 Tsp Toasted Sesame Oil
DIRECTIONS:
Rice: Cook rice in boiling water for 20 minutes, drain.
Pickled Carrot: Mix shredded carrot with vinegar, sugar, and salt in a bowl. Stir occasionally and set aside.
Chili Sauce: Whisk all ingredients together in a small bowl until smooth.
Sesame Spinach: Heat oil in a large pan over medium heat and cook garlic until soft. Add spinach in batches and cook until wilted. Increase heat, then add beansprouts, soy sauce, sugar, and salt. Cook for 3–4 minutes until liquid evaporates.
Just before serving: Heat sesame oil in a pan, fry eggs, and pat pickled carrots dry.
Finishing up: In a dish, add rice and cooked veggies. Add fried egg, drizzle with chili sauce, sprinkle with toasted sesame seeds, and enjoy!
